Guacamole is a typical recipe from Central America, the most popular variation being that of Mexico. This dish is made up of a sauce based on avocado, and depending on the season of the year we are going to prepare it, we can accompany it with different vegetables and even fruits.
Guacamole is used in Mexican cuisine as a spicy sauce to accompany stews, molote cakes and popular tacos, with most of them as a base for red meat. In addition, it is important to indicate that in Mexico guacamole is usually prepared in two versions, one with all the ground pulp and another with the pulp in pieces.
The guacamole (known as guacamol in Central America) has historical records since the time of the Aztecs and at that time was considered a fruit of erotic meaning and symbolized the testicles, therefore, women could not make their collection.
For the Aztecs, the origin of this dish is in the legend that tells how Quetzalcoatl, Toltec god, was the one who offered this recipe to his people for the first time.
Ingredients for preparing guacamole
- 2 avocados
- 40 g onion
- 80 g tomato
- 1 serrano or jalapeño pepper
- Half a lemon or lime
- Coriander leaves
How to make guacamole step by step
- Peel and chop avocados
- We remove the pulp and crush it in the blender (we can also use a mortar)
- Finely chop the onion, add coriander leaves and proceed to do the same with the tomato and chili
- We add all the ingredients to the crushed pulp
- We add a few drops of lemon and salt to taste
